The K&G 1000 Water Stone is an all-purpose grit. It gives a polished finish

for the knife bevels of paper cutting knives.

Just like the other water stones, it quickly removes steel. We've never encountered

another 1000 grit water stone that removes steel so quickly while still leaving such
